Why you'll love it

  • From a Selfoss bakery, not a factoryKökugerð HP has baked flatkökur, kleinur and rúgbrauð in Selfoss since 1991 and sells them in shops across Iceland. This is the loaf Icelanders pick up with their groceries.
  • Sweet by recipeSugar and brown sugar are mixed into the rye and wholemeal, which is why rúgbrauð tastes closer to cake than to sandwich rye. The label puts it at 18 g of sugars per 100 g.
  • Baking soda, not yeastLike all rúgbrauð it rises on baking soda and sour milk rather than yeast, which gives the tight, moist crumb that holds up under butter and fish.
  • The taste visitors go looking forReviewers found it on a trip, could not find the same thing at home and now eat a slice every morning. One serves it at dinner with smoked salmon.
  • Buy for the freezerEight or twenty-one loaves cost less per loaf. Slice, wrap and freeze, and you have rúgbrauð for months.

Questions people ask before they buy

What does Icelandic rye bread taste like?
Dark, dense and sweet, with a soft, moist crumb. It is nothing like a German or a deli rye: sugar and brown sugar go into the dough, so the first taste is closer to a sticky malt loaf or a plain gingerbread. One reviewer called it “like eating cake”.
How do Icelanders eat it?
Sliced thin and buttered. On top goes smoked salmon, smoked trout or pickled herring; a slice of cheese works too. At Christmas it sits next to hangikjöt, the smoked lamb. Nothing needs toasting or warming, though a slice warmed in the oven is a treat.
Why is it called thunder bread, volcano bread or geysir bread?
Rúgbrauð was traditionally baked in a pot buried in hot geothermal ground for about a day: hverabrauð, hot-spring bread, which visitors call volcano or geysir bread. Thunder bread, þrumari in Icelandic, is the nickname for what a generous helping of rye does to the digestion. The bakery itself calls this loaf “a good þrumari”.
How long does it keep, and can I freeze it?
About a week at room temperature if it is wrapped, and up to three months in the freezer. Slice it before freezing and take out what you need; thaw at room temperature or warm it in the oven.
Why is shipping charged by weight for bread?
Because the loaves are heavy for their size: 600 g each, so eight loaves is nearly 5 kg and twenty-one is over 12 kg. The parcel is charged at the carrier’s rate for that weight, shown at checkout before you pay, and rye bread is not part of the free-shipping offer. Ordering it with other things makes the shipping go further.
