Chocolate and coconut covered marshmallow - Kókosbollur

Eight soft marshmallow domes with a thin cocoa coating and a roll of coconut on the outside. The marshmallow is light and fluffy — press one gently and it springs back — the coating cracks a little, and the coconut gives it a toasty, chewy edge. Sweet, airy and gone in two bites; children squash them flat first, adults pretend they don't.

Kókosbollur means “coconut buns”, and they're one of those Icelandic treats that show up on the Christmas table and in the lunchbox alike. This box is from Sambó, an Icelandic brand.
